It's tough knowing what to get, or how to get enough, or what even is enough, nutritionally for your new "vegan" or "vegetarian" or "plant based" youth. I decided to post this little creative idea I use to make it easier.
Ladies and gentlemen, my Power Taco:

Mushrooms are major nutritional boosters and a juggernaut in the #anticancer world of human consumption (I'll save the conversation about polysaccharides and beta glucan compounds for another day).
They are an excellent source of b-vitamins: niacin, pantothenic acid, riboflavin and thiamine. B6 and B12 are exceptional subjects for many plant based consumers. A steady diet of mushrooms can be the solution.

Beans, quinoa and lentils are a powerhouse of nutrients when combined. They offer naturally occurring branch chain amino acids for muscle development that offers relief to the kidneys.
They also offer a fiber and phytochemical content that is known to help fight several cancers, while also promoting a healthy intestinal flora.
Another major benefit is that they offer the full spectrum of naturally occurring electrolytes that our bodies were naturally designed to need (not the incomplete, low grade, sugar-filled sports drink version of so-called electrolytes). Electrolytes serve many roles to help the body maintain proper neurological functionality.

Kale is the veggie powerhouse of greens. High in vitamin A, folate, alpha linoleic acid, vitamin C, phosphorus, potassium, calcium, zinc this veggie slash multivitamin from the Earth also aids in eye health in preventing macular degeneration.

I often premake a large pot of this thick mixture at the start of my work week. It's eaten in several different ways: veggie chili Mac and cheese, tacos, burritos, chili over rice and many other concepts.

In this one I combine the nutritional powerhouses of beans, quinoa, lentils, white mushrooms, and kale:
Grilled white mushrooms with smoked paprika and garlic, with my veggie chili "meat", on prepared corn tortillas, topped with cilantro and sweet pepper chili sauce.
This thing is healthy in so many more ways that I've noted...

...Even the chlorophyll in the leaves of the cilantro (just as parsley) has been shown to help inhibit the cancer cell development resulting from the consumption of fried foods.
